History of Nomad Kimchi
My grandmother in Korea was known to be one of the best kimchi makers around. When she would make food, the neighbors would line up down the block outside her kitchen just to get a whiff and maybe a sample. She struggled through war and famine to raise nine children alone, keeping a warm smile on her face, enjoying a glass of soju every morning, and sharing her kimchi with everyone around.
I was lucky enough to be a part of her life when she came to live with me and my mother in Texas when I was a teenager. At first, I was forced to learn to help her in the kitchen, mainly because my mom was afraid she would set the house on fire. Reluctantly, I helped and slowly my annoyance grew to love. Over time, my grandmother taught the art of making kimchi and, most importantly, her personal recipe. This skill would be the one thing that tied me to my past and gave me inspiration for the future. Back then, we made every batch without a recipe. Mixing the ingredients until it was perfect. Now, I carry on her legacy as the first woman in our family to take her tradition, put it in writing, and share it with you.
I founded my own kimchi company in Austin, TX in 2013 and named it after my grandmother. Oh Kimchi Austin was the premiere traditional craft kimchi on the market and set the standard for quality for so many of our customers. On the shelves in Whole Foods, and over 40 other retailers, on Amazon and a member of the Good Food Guild, Slow Food, Austin Chronicle Food Award winners, and featured food vendors at the Austin City Limits Music Festival, Oh Kimchi was a tremendous movement in local food. In the years that Oh Kimchi was in business, we revolutionized the food community, producing the most traditional flavors, with responsibly sourced ingredients and all the time and patience taught to me by my Korean grandmother.
Now we are changing the game of kimchi yet again... this time I want to focus on education and preserving this artisanal foodway for decades to come.
